Basic Pesto Preparation
In a food processor, pack the basil leaves, garlic and nuts and process just until the mixture is chopped. With the motor running, add the oil through the feed tube until the mixture is as thick as you like. Fold in the grated cheese and a little salt and pepper if you like. Store in the fridge in a glass jar, covered with a little extra olive oil, for about 2 months.
