Baked Eggs with Spinach Preparation
Heat the oil in a saute pan. Add the onion, cook until it softens. Add the spinach leaves and ham, cook for 1-2 minutes. Divide into 4 ovenproof dishes, arrange the chopped tomato around the edge, crack an egg into each dish, season with salt, pepper and thyme. Cover with tin foil and bake at 200oc for 5-8 minutes until the egg has firmed. Serve immediately with warm toast or croissants. NOTES : Serves 4
