1 tsButter
2 Eggs
2 tbShort-grain rice
1/3 cCaster sugar
600 mlmilk
1 tsVanilla essence
nutmeg; Freshly grated

Baked Rice Pudding Preparation

1. Pre-heat oven to 150deg.C. Cook rice until only just tender. Drain and place in an oven proof dish. 2. Beat eggs, sugar, milk and vanilla together until combined. Pour over the rice and mix through. Dot with small pieces of butter and sprinkle with nutmeg. 3. Place dish in roasting pan. Add enough hot water to large pan to come halfway up the sides of the rice dish. Bake in oven about 1 - 1 1/4 hours or until golden on top. Serve with stewed apples and sultanas and a dollop of cream.
