4 slGood wholemeal bread
A grating of fresh nutmeg
2 Ripe bananas
100 mlFromage frais; (3 1/2fl oz)

Banana And Cinnamon Toast Preparation

Toast the bread well either in a toaster or under the grill. The secret is to toast the bread once then allow the toast to cool slightly and then toast it again. This process allows the bread to become even cripser without being dry. Peel the bananas and then place them in a bowl and crush them with a fork. When they are well crushed place a spoonful of the banana mix on top of each piece of toast. Place a blob of fromage frais on top and then grate over a little fresh nutmeg.
