"Very tasty recipe!! Nice texture and a great way to use up old bananas! I added a few drops of rum extract, vanilla and baking spice (from Penzeys). Would be great with walnuts or pecans too!! I had trouble picking out the topping ingredients (apparently mixed within the other ingredients) so I used 2T firm butter, 2T flour, 1/3 c. brown sugar and 2 tsp. cinnamon. Mix and sprinkle. Mmmmmm!" - riegs54l

Original recipe makes 12 Servings
1 1/2 cAll-purpose flour
1 tsBaking soda
1 tsBaking Powder
1/2 tsSalt
3 lgRipe bananas; mashed
3/4 cSugar
1 Egg; lightly beaten
1/2 cButter; melted
Topping
1/3 cBrown sugar; packed
1 tbAll-purpose flour
1/8 tsGround cinnamon
1 tbButter

Banana Crumb Muffins Preparation

In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper lined muffin cups three fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield:1 dozen

    I made these last night and I thought they were great! I made half of them with chocolate chips and the other half without. The only thing I will do differently next time is I will put the topping on right before they are done cooking because my topping wasnt a crumble at all by the time the were done cooking. But they still tasted very good and they are super easy to make!

    A little tweak and oh my god. Perfect is not the word. I substituted. A little melted butter approx 20-30 ml with olive oil. Superb and a great way to use up the bananas the kids fail to eat.

    I made muffin tops out of this recipe and they were fabulous. I added 1/2 t. vanilla to the batter and chose to omit the crumb topping. However, I sprinkled each with vanilla sugar before baking. Perfect.

    Ok, so I made some edits. I doubled the recipe because I wanted to make 12 Jumbo muffins. Turned out that doubling it made 18. Go figure. I used my own crumb topping that I think gets that 'actual' crumb texture. I noticed that in a lot of the photos people submitted the top looked gooey. That's the brown sugar effect or it might be that they didn't use COLD BUTTER, not marjarine or any of that crap. You HAVE to use BUTTER in baking. And the colder your butter is when you are making a crumb topping the better. I added 2 tsp of vanilla to the mixture and I think I might even add a little more next time. It's a really moist cake and not too sweet. I had to cook mine for 25 - 27 minutes . My Crumb topping: 1/2 stick COLD STICK BUTTER, 1/2 cup flour, 1/8 cup sugar and 1 tsp cinnamon. Combine the dry ingredients and then cube the butter and add. It works best with a pastry blender to 'cut ' the butter in. You could use a fork, but it can get awkward. In between the baking, put the crumb topping in the fridge so it stays nice and cold. Overall a GREAT RECIPE!!

    Gonna try these tonight. Does it make 12 Jumbo Muffins, or 12 regular sized muffins? I personally like my muffins JUMBO SIZED lol. so I just wanted to know if I should double the recipe or not
