3 Garlic
1 1/2 cTomato; chopped
1 tbLemon juice
3 cGreat northern beans
1 tbolive oil
1/4 cBasil
1/2 cParmesan cheese

White Beans with Tomato, Basil, and Parmesan Preparation

In a skillet, heat oil over low heat. Add garlic and cook, stirring occasionally, for 4 minutes or until lightly colored and fragrant. Stir in the beans, tomato, and basil and cook for 7 minutes or until heated through and the tomato has released its juices. Stir in cheese and lemon juice. This was even better than I thought it would be. I did change one thing, I added a pinch of salt and black pepper.This is a healthy and delish lunch or side dish.
