Original recipe makes 4 servings
1 tsCanola oil
1 tsCoriander
4 Garlic; minced
1 tsSea salt
1/2 tsPepper
1/4 cAlmonds; chopped
2 lgPotatoes; cut in 1" cubes
2 tsGaram masala
1 cWater
1/2 tsChili powder
2 cCauliflower florets
1 Onion; chopped
1 tsTumeric
10 slFresh ginger; minced
1 cTomato puree;

Aloo Gobi (Potatoes with Cauliflower) Preparation

Saute the onions, garlic, and ginger in skillet. Add the almonds and all the spices except the garam masala and saute about 3 minutes. Add the tomatoes, potatoes, and cauliflower with 1 cup water and simmer until the vegetables are tender and the sauce is thick, abotu 15-20 minutes. Add the garam masala and serve.
