Poor Mans Jambalaya
| 4 smWhole Bay Leaves |
| 1/2 tsBlack pepper |
| 1 cSmoked pork sausage, diced |
| 1/2 tsGround cumin |
| 4 tbMargarine |
| 1 tsWhite pepper |
| 2 cUncooked rice |
| 1 tsGround red pepper |
| 1 tsGumbo file |
| 1 1/2 cSmoked ham |
| 1 1/2 cCelery, chopped |
| 1 cBell peppers, chopped |
| 4 cBasic beef, pork or chicken |
| Vegetable stock |
| 1 tsDry mustard |
| 1 1/2 cOnions, chopped |
| 1 1/2 tsGarlic, minced |
| 1/2 tsDried thyme leaves |
| 1 tsSalt |
Poor Mans Jambalaya Preparation
Thoroughly combine the seasoning. Mix ingredients in a small bowl and set aside. In a large heavy skillet, melt margarine. Add ham and sausage. Cook for 5 minutes, stirring occasionally. Add onions, celery, bell peppers, garlic and seasoning mix. Stir well and continue cooking until browned, 10 to 12 minutes, stirring occasionally and scrapping bottom of pan occasionally. Add the stock, stirring well. Bring to a boil; reduce heat and simmer until rice is tender, about 20 minutes.
