"This was an easy, healthy, meal to throw together and my family loved it. I used only 3/4 of a large green pepper though and used a can of fire roasted tomatoes. Also, I didn't wait to put in the peppers and tomatoes (a result of having a 1yr old and a 2yr old underfoot)...I just dumped all the ingredients into the crockpot while the steak was browning, and then added the steak, juices and all! 1 1/2 lbBeef round steak; (up to 2)
1 cOnions; chopped
2 lgGreen peppers
1 tsSugar
1/2 tsSalt
1/4 tsGround ginger
1/2 cCold water
1 cloveGarlic; minced
2 tbCooking oil
1 tbCornstarch
1/4 tsPepper
4 Tomatoes; cut into eighths
1/4 cSoy sauce
noodles; Cooked, or rice

Pepper Steak Preparation

I tried this recipe last night and it was terrific and easy. I noted the changes that I made to the recipe at the bottom. cut beef into 3 inch x 1 inch strips; brown in oil in a skillet. Transfer to a slow cooker. Combine the next seven ingredients; pour over beef. Cover and cook on low for 5-6 hours or until meat is tender. Add tomatoes and green peppers; cook on low for 1 hour longer. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice. Yeild : 6-8 servings note : I had 4 1/2 lbs of round steak to use up, so I used all of it and doubled the recipe. I did not double the amount of green peppers, two was enough. For the tomatoes I used what I had on hand ( two 12oz cans of prepared diced italian spiced tomatoes) The meat was soo tender and juicy that even my picky 11 year old son had seconds.     Great recipe, really easy and tasty. Does anyone know how to prepare it without the slow cooker?

    Great and so easy to do. I browned the meat and put in slow cooker with onions and one pepper chopped on top then poured a small can of chopped tomatoes over top and cooked on high for 4-5 hrs. I served it over rice which u can make ahead and reheat.

    Made it tonight for dinner & everyone had seconds & even the picky hubby liked it. I did omit the cornstarch (on accident) but it was still perfect. The flavor was amazing & perfect on top of white rice.
