8 cWhite vinegar
10 Pods hot pepper, (optional)
1 cWater
4 lbSmall/tender/FRESH okra
3/4 cSalt
10 Garlic

Okra Pickles Preparation

Wash okra fast- dont let it soak. Cut stem leaving a short stub. Pack in hot, clean pint jars. Place one pepper and garlic in each jar. You may add more pepper and garlic as well as mustard seed if you like. Bring vinegar, water, and salt to the boil. Pour over okra, wipe rim and seal. Process in boiling bath 10 minutes.
