4 cGrated sweet potatoes
4 tsLemon juice
4 Eggs
1 tsCinnamon
1/2 cButter; melted
1 tsLemon rind
1/2 tsNutmeg
2 cmilk
2 cBrown sugar

Old-Fashioned Sweet Potato Pudding Preparation

Wash, pare and grate potatoes. Beat eggs (until light) in large mixing bowl, adding potatoes, sugar with spices mixed in, milk, butter, lemon rind and juice. Mix well. Pour into a greased baking dish. Bake at 350 degrees for 1/2 hour. Stir the pudding and bake 15 to 20 minutes. Good served hot. Posted to recipelu-digest by "Diane Geary" on Mar 13, 1998
