Boil and dice lobster. Melt butter in large skillet; stir in flour, nutmeg, paprika, salt and sherry. Slowly add milk, stirring constantly, until thick. (You may need more milk.) Add lobster (or same amount of shrimp). Put in large casserole, sprinkle cheese on top, then paprika. Broil until cheese melts or bake at 450 until cheese melts. Serve over rice. MRS N.R.
