Suggest a better descriptionSpace lollipop sticks out on a buttered marble slab. Combine sugar, water and cream of tartar in a small heavy saucepan (one per color). Place over high heat and stir to dissolve sugar. Bring to a boil, then cover and cook 4 minutes to let steam wash down any sugar crystals stuck to the sides. Uncover and cook WITHOUT STIRRING over medium high heat until mixture begins to thicken. Add food coloring - 3 drops for green, 7 drops for red, or 3 drops for yellow - and cook until mixture reaches 310F on a candy thermometer. Remove from the ehat at once and add a few drops of peppermint oil or the flavoring of your choice. Pour small circles of candy styrp at the tops of the sticks and allow to cool for a few minutes before lossening them, but be sure to loosen before they cool completely, or they might crack.
