Great way to use Left over baked potatoes

"Great recipe, added a few things to get if a touch more flavor....used Krazy Mixed Up Salt instead of regular along with a few dashes of Bacon Salt, added 1/2 tbs of parsley, upped the Parmesan cheese a little bit, and paprika over the top before before baking those last 20 mins." - jgardner1041

2 mediumBaked potatoes
1/3 cupSour cream
3 tablespoonmilk
2 teaspoonParmesan cheese; grated
1/8 teaspoonSalt
2 teaspoonBacon bits
4 teaspoonCheddar; shredded

Twice Baked Potatoes Preparation

Bake Potatoes at 425 for 40-45 minutes or until tender. Allow to cool to the touch. Ina a bowl, combine sour cream, milk, Parmesan cheese and salt. Cut a thin slice off the top of potatoes; carefully spoon out the pulp, leaving a thin shell. Mash pulp with sour cream mixture; stuff shells. Sprinkle with bacon and cheddar cheese. Bake at 325 for 20 minutes or until heated through.

    I mAke these a lot, for a time saver I put them in the microwave until they are just soft and then cut a small hole on the top and uses small teaspoon to scrap them out.

    Pretty Good! I cut them wrong though, so restuffing the potatoes was a big pes. Make sure you cut of the top and don't split them down the middle.

    This is my number one go to/make ahead side dish. You can fix ahead and heat to warm and melt cheese just before serving. I personally get tired of making them, but people continue to ask for them. You can't argue with that. them.Can'targwith that
