Great way to use Left over baked potatoes

Bake Potatoes at 425 for 40-45 minutes or until tender. Allow to cool to the touch. Ina a bowl, combine sour cream, milk, Parmesan cheese and salt. Cut a thin slice off the top of potatoes; carefully spoon out the pulp, leaving a thin shell. Mash pulp with sour cream mixture; stuff shells. Sprinkle with bacon and cheddar cheese. Bake at 325 for 20 minutes or until heated through.

elizabethgarriottbeverly 6 months agoI used Lawry's and onion powder. I didn't have sour cream on hand so I used cream cheese. I used up a bag of potatoes that were on the way out. Used the cut off tops for loaded potato skins. Going to have some yummy stuff waiting for me in the freezer!
