Cover the bottom of a skillet with olive oil.
Remove skin and bones from salmon; drain well. In mixing bowl, combine salmon with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes.
Sprinkle salmon patties with salt.

bustardbill1 1 year agoMy mom used to make these. I forgot how good they are. I used my leftover salmon from last night. I also fried my onion and celery in the pan first then added it to the mixture. Yum!

DNR2022 1 year agoA family recipe that I had forgotten about till I found this. Make sure you pick the can that is boneless and skinless for the salmon. Works great with tuna too.

FSolomon 2 years agoWhile I agree that the finished product seems to be missing something, the recipe is so simple and basic that it's wide open for modification. I used canned tuna instead and think this will go in my regular breakfast/snack rotation. Great basis for a lot of fun addition.
