Cover the bottom of a skillet with olive oil.
Remove skin and bones from salmon; drain well. In mixing bowl, combine salmon with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes.
Sprinkle salmon patties with salt.

bustardbill1 9 months agoMy mom used to make these. I forgot how good they are. I used my leftover salmon from last night. I also fried my onion and celery in the pan first then added it to the mixture. Yum!

DNR2022 1 year agoA family recipe that I had forgotten about till I found this. Make sure you pick the can that is boneless and skinless for the salmon. Works great with tuna too.

Tex5150 2 years agoI used left over baked salmon from the night before. It turned out good. Add a little Old Bay to spice it up a bit.
