1 canSalmon
1 Egg
1/2 cupItalian bread crumbs
1/2 teaspoonSalt
1/2 teaspoonPepper
1 Onion; diced
1/2 cupolive oil

Salmon Patties Preparation

Cover the bottom of a skillet with olive oil.

Remove skin and bones from salmon; drain well. In mixing bowl, combine salmon with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes.

Sprinkle salmon patties with salt.

    My mom used to make these. I forgot how good they are. I used my leftover salmon from last night. I also fried my onion and celery in the pan first then added it to the mixture. Yum!

    A family recipe that I had forgotten about till I found this. Make sure you pick the can that is boneless and skinless for the salmon. Works great with tuna too.

    I'm more of a crab cake person, but these are the bomb! I wouldn't add any salt though because the canned salmon already is kind of salty.
