Delicious, light chicken salad. Can be enjoyed year-round with canned or flown-in peaches, but also great for a spring or summer dinner with fresh peaches.
"Made this tonight with an unplanned substitution.My wife came home from the grocery store with peaches that looked great on the outside, but when we cut into them, were really mealy. So we tossed them.
Fortunately, we had FANTASTIC strawberries (best ones we've had all year), and I'm here to tell you that coarsely chopped strawberries are a terrific substitute. Also added 3 tablespoons or so of finely diced red onions." - stevemur

Steve's Chicken Peach Salad Preparation
Chill plates.
Mix cooked chicken breast, peaches, pecans, celery with poppy seed dressing. Refrigerate.
When ready to serve, arrange salad on bed of Butter (or Boston) lettuce and torn iceberg lettuce. Garnish with pecans and cherry tomatoes.
