Ready in 20 minutes
Delicious, light chicken salad. Can be enjoyed year-round with canned or flown-in peaches, but also great for a spring or summer dinner with fresh peaches.
"Made this tonight with an unplanned substitution.
My wife came home from the grocery store with peaches that looked great on the outside, but when we cut into them, were really mealy. So we tossed them.
Fortunately, we had FANTASTIC strawberries (best ones we've had all year), and I'm here to tell you that coarsely chopped strawberries are a terrific substitute. Also added 3 tablespoons or so of finely diced red onions."

Corwin26 4 months agoI liked this and so did my weight-watching companions when they came over for a visit! Fast, flavorful and really fun to tweak. None of us really like poppy seed dressing so I used a light dill-mint dressing and let me tell you did that ever make those peaches stellar! I also left out the tomatoes and added some dried cranberries to the mix. TY for the inspiration!

TheShayne 2 years agoWe didn't want to heat up the house so we grilled the chicken. Turned out great! Im gonna alter it next time with a few changes.
Heatherferg 2 years agoWill make sure I buy sweet, juicy peaches next time. Have made this before using mango and preferred it.
katalia369 3 years agoWith peaches out of season I made with dried apricots instead. Cubed a bag of them into the salad and it was still very good. Also used a s a leftover turkey alternative after thanks giving with pears.

divalicious 4 years agoI managed to select some excellent peaches for this salad. I made a creamy poppy seed dressing that I plan to keep in rotation. For the chicken, I made a poaching liquid of water, sherry, garlic cloves, and herbs de provence. YUM! This chicken salad recipe is a keeper. It should make really good sandwiches too.

stevemur 5 years agoThis salad would also be very good with ripe mangoes instead of the peaches. Delicious!
stevemur 6 years agoWe had some great peaches at our local market this week, so I made this salad with other ingredients on-hand. Very refreshing, brightly flavored late summer meal.
Snoop722 6 years agoCelery is mentioned in the directions but not in the ingredients list. How much celery should be added? Thank you!
stevemur 7 years agoJust a note -- the pecans should be unsalted.
