"A nice flavoured meat loaf we both enjoyed. I have been on a low sodium diet for the last while so I cut the salt in half. I added a tbs of worchestershire sauce and we found it tasted a little salty. Possibly because our tastes have changed. Will eliminate the salt altogether the next time I make it. | 1 cupsoft bread crumbs |
| 3/4 cupmilk |
| 1/2 cupOnions; chopped |
| 1/2 cupParmesan cheese |
| 1 egg; slightly beaten |
| 1 1/2 teaspoonsSalt |
| 1/4 teaspoonPepper |
| 1/4 teaspoonOregano |
| 1 small cantomato sauce |
| 3 slicesmozzarella cheese |
Diner Meat Loaf Preparation
Heat oven to 350 degrees.Combine all ingredients except tomato sauce and Mozzarella cheese.Mix lightly.In a 10 x 6" loaf pan, shape loaf.Bake 1 1/2 to 2 hours.
Drain excess fat.Pour tomato sauce over loaf during last 1/2 hour of baking time.Place Mozzarella cheese on top.Bake 5 to 10 minutes.Serves 4 to 6
