"A nice flavoured meat loaf we both enjoyed. I have been on a low sodium diet for the last while so I cut the salt in half. I added a tbs of worchestershire sauce and we found it tasted a little salty. Possibly because our tastes have changed. Will eliminate the salt altogether the next time I make it. " - RKG1

Original recipe makes 4
1 1/2 poundsGround beef
1 cupsoft bread crumbs
3/4 cupmilk
1/2 cupOnions; chopped
1/2 cupParmesan cheese
1 egg; slightly beaten
1 1/2 teaspoonsSalt
1/4 teaspoonPepper
1/4 teaspoonOregano
1 small cantomato sauce
3 slicesmozzarella cheese

Diner Meat Loaf Preparation

Heat oven to 350 degrees.Combine all ingredients except tomato sauce and Mozzarella cheese.Mix lightly.In a 10 x 6" loaf pan, shape loaf.Bake 1 1/2 to 2 hours.

Drain excess fat.Pour tomato sauce over loaf during last 1/2 hour of baking time.Place Mozzarella cheese on top.Bake 5 to 10 minutes.Serves 4 to 6

Was good but was too watery due to the milk so I had to add more breadcrumbs.... would also add green peppers to the receipe, it seemed to be missing something.

Finally, a good meatloaf recipe! We all liked it, kids included. I liked the extra touch of cheese and the tomato sauce. I accidentally forgot to add the parmesan, so we sprinkled some Parmesan over the top of the pieces. I'm sure it would just be even better with it added to begin with.

I'm not a good cook at all and this makes me seem like a pro!!! The family (including step-daughter!) LOVED it. A definate regular meal for us from now on.
