Grilled Lemon Lime Chicken over Angel Hair

Recipes »  Main Dish  »  Poultry - Chicken

This Grilled Lemon Lime Chicken dish is a delicious and easy summer meal. Marinate the chicken for 3-6 hours for best flavor. At the end, finish with drizzled lemon and lime juice, or reduce the marinade at a brief boil and pour over chicken and noodles. Garnish with parsley and serve.

"This time, after placing the chicken breasts on an oiled grill, I put the remaining marinade in a small saucepan and brought it to a boil (to kill off any chicken germs) for 10-15 seconds, then reduced it to low, stirring in a tablespoon or two of butter to make a sauce. Plated it with the angel hair first, then sauce, then sliced chicken breast and a little bit of olive oil on the top. Delicious." - stevemur

2 eachChicken breasts
4 tablespoonolive oil
juice of 2 limes
juice of 2 lemons
2 clovesGarlic; crushed
2 tablespoonParmesan; for garnish
4 servingsAngel Hair
1 tablespoonButter
3 teaspoonFresh parsley; for garnish
1 teaspoonGarlic salt

Grilled Lemon Lime Chicken over Angel Hair Preparation

Combine olive oil, lemon juice, lime juice, garlic, and the skins of the lemon and limes in a ziploc bag. Marinate overnight, or a minimum of four hours.

Prepare hot grill, and bring large pot of water to boil.

Grill chicken 5-6 minutes on each side.

Optional: Take the marinade and put in a small saucepan; bring to a boil, then let simmer to reduce by half. Add 2 tablespoons of butter and salt/pepper to taste. Add a few tablespoons of wine (optional). Use this citrus sauce to pour over dish at the end.

When chicken is four minutes from complete, place angel hair in water, boil for 2-3 minutes until just done, and drain. Drizzle with olive oil, butter, and add garlic salt. Remove chicken from grill, and slice along bias; 1/2 inch pieces. Arrange on bed of angel hair, top with shaved parmesan cheese, and serve immediately.

Notes

Easy, delicious summer grilling meal. Always a reliable hit. It will be tempting to shorten the marinating time, but don't. It makes all the difference.

  • This tastes great. Modified a bit by using 1 garlic glove crushed since my family is not big on garlic. Very delicious!! photo by lacrishahicks lacrishahicks

  • To get great grill marks, make sure the grill is medium-high, and carefully brush vegetable oil on the grill (danger watch out for flames!), and rotate 90 degrees after 3-4 minutes. photo by stevemur stevemur

Delicious and easy. Consider reducing the marinade, and adding some chicken broth for a sauce at the end.

Flavor was good, but could use some color to the dish.

Excellent light and flavorful pasta dish. I'm one that just can't leave a recipe alone, but this time I have to admit, it's perfect just the way it is. So good!!

My first attempt I followed the recipe exactly. The result was equivalent to sucking on a lemon. The next time I added a tbs of sugar to the marinade to balance out the acid and it was amazing!

It's good and easy to make. Marinating will probably kick up the flavor, but isn't necessary.
