Grilled Lemon Lime Chicken over Angel Hair

This Grilled Lemon Lime Chicken dish is a delicious and easy summer meal. Marinate the chicken for 3-6 hours for best flavor. At the end, finish with drizzled lemon and lime juice, or reduce the marinade at a brief boil and pour over chicken and noodles. Garnish with parsley and serve.
"This time, after placing the chicken breasts on an oiled grill, I put the remaining marinade in a small saucepan and brought it to a boil (to kill off any chicken germs) for 10-15 seconds, then reduced it to low, stirring in a tablespoon or two of butter to make a sauce. Grilled Lemon Lime Chicken over Angel Hair Preparation
Combine olive oil, lemon juice, lime juice, garlic, and the skins of the lemon and limes in a ziploc bag. Marinate overnight, or a minimum of four hours.
Prepare hot grill, and bring large pot of water to boil.
Grill chicken 5-6 minutes on each side.
Optional: Take the marinade and put in a small saucepan; bring to a boil, then let simmer to reduce by half. Add 2 tablespoons of butter and salt/pepper to taste. Add a few tablespoons of wine (optional). Use this citrus sauce to pour over dish at the end.
When chicken is four minutes from complete, place angel hair in water, boil for 2-3 minutes until just done, and drain. Drizzle with olive oil, butter, and add garlic salt. Remove chicken from grill, and slice along bias; 1/2 inch pieces. Arrange on bed of angel hair, top with shaved parmesan cheese, and serve immediately.
Notes
Easy, delicious summer grilling meal. Always a reliable hit. It will be tempting to shorten the marinating time, but don't. It makes all the difference.

This tastes great. Modified a bit by using 1 garlic glove crushed since my family is not big on garlic. Very delicious!!

To get great grill marks, make sure the grill is medium-high, and carefully brush vegetable oil on the grill (danger watch out for flames!), and rotate 90 degrees after 3-4 minutes.
