I did a variation as a salad with cheese and tomato chunks. 86 the balsamic vinegar for a clean light flavor.

I could eat this every day. I often use Newmans Own salad dressing. I soak the cheese and tomatoes in the 'Balsamic Vinaigrette' salad dressing or their ' Olive Oil and Vinegar'.

While this might not be the 'authentic' version it's very tasty and absolutely simple to make.

Just a note -- I think sgrishka is quite correct in noting that true Caprese Salad does not have balsamic vinegar. So, consider this an adaptation!

Delightful and refreshing. The key is ripe tomatoes and good quality cheese. Yum!

Made it tonight with fresh yellow tomatoes, which are in season right now here in the Northwest. Pretty delicious, and colorful. As always, the key for me with this recipe is to get water-packed fresh buffalo mozzarella, if you can. The quality of the cheese and the ripeness of the tomatoes make all the difference in this simple salad.
