How to make caprese salad - it's a light, delicious summer salad. Some feel that balsamic vinegar should be left off -- it's a personal preference, and I'm happy with this salad either way. Be sure to use the freshest possible buffalo mozzarella, basil and tomatoes.

4 largeTomatoes; hot house, fresh, juicy
4 tablespoonsExtra virgin olive oil
1 1/2 tablespoonsBalsamic vinegar
1 packageFresh mozzarella cheese; packed in water
16 leavesBasil; sliced
Salt and pepper

Caprese Salad (Mozzarella, Basil, Tomato) Preparation

Slice tomatoes about one quarter inch thick and arrange on a plate.

Slice thin discs of mozzarella cheese and place on each tomato. Top with a sprig of basil.

Mix olive oil and balsamic vinegar. Pour over tomatoes. Add salt and pepper to taste. Serve

Notes

Very attractive, simple, quick and elegant first course on a hot spring or summer day.

It is even better if Buffalo Mozzarella is used. Try to find it in the supermarket. That's the original Italian recipe.

I did a variation as a salad with cheese and tomato chunks. 86 the balsamic vinegar for a clean light flavor.

I could eat this every day. I often use Newmans Own salad dressing. I soak the cheese and tomatoes in the 'Balsamic Vinaigrette' salad dressing or their ' Olive Oil and Vinegar'.
