Cream of Pumpkin Soup with Cinnamon Croutons Preparation
Saute onion in butter until tender. Add 1 can broth; stir well. Bring to a boil. Cover, reduce heat, and simmer 15 minutes. Pour broth mixture in blender and process til smooth.
Return mixture to pan. Add remaining can of broth, pumpkin, and next 4 ingredients; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes, stirring occasionally. Pour in cream, and cook until heated -- do not boil. Top each serving with Cinnamon Croutons (below). Makes 6 cups.
Cinnamon Croutons
3 Tbsp. butter
1 Tbsp. brown sugar
1/4 tsp. ground cinnamon
4 slices wheat bread
Combine butter, brown sugar, and cinnamon; stir well. Spread on bread slicesand bake at 400F for 8-10 minutes until bread is crisp and topping is bubbly. Cut bread into cubes.
