Good, basic, savory dish. A bit salty for my taste but easy to make.

"This was a wonderful dinner but it is very fatty. So I added half and half with a little flour instead of heavy whipping cream and no salt because when you add bacon there is enough salt and half of the bacon it calls for also to add a great flavor and alittle spice I added lemon zest on the top with red pepper. It was fantastic. Tyr it, it is alittle better for you this way. One other thing I did was add whole wheat angel hair pasta instead of rice. HUMMMM Happy Cooking!!!" - angabell

Original recipe makes 4 Servings
2 packagesUncle Bens Garlic & Butter Rice
10 ozBacon; 1 inch sliced
1 lbChicken breast; boneless, skinless, sliced
1 teaspoonGarlic
1 cupHeavy cream
1 cupFrozen petite peas; thawed, drained
2 ozParmesan cheese; shaved
3 Green onions; thinly sliced

Chicken Carbonara Preparation

1. Cook rice to package directions.

2. Cook bacon until crisp; drain off all but 2 tbsp. of drippings. Season chicken with salt and pepper as desired. Add chicken, saut until seared on all sides.

3. Add garlic and cream; simmer until it begins to thicken. Add peas, continue to cook until peas are heated through. Stir in enough cheese to thicken to sauce consistency.

4. Serve over rice; garnish with onion; top with cheese (if desired).

    Very tasty! I didnt have chicken but had the other ingredients. I wanted to use up leftover brown rice and turkey bacon. This was so easy to make! So flavorful...I'm sure it will be even better when I make it again with chicken added!

    You can consider this an aggless carbonara as it has bacon in the pasta. carbonara refers to a pasta dish with egg and bacon. So it is nammed correcly. And the dish is absolutely simple goodness, thanks for sharing!!

    I made this recipe for my husband and myself. Absolutely delicious!!! I used one pkg butter & garlic rice and one pkg rice pilaf but it still tasted great. I also didn't use the onions as we aren't fond of them. I will definitely be making this again in the future.

    Made this for dinner! It was delicious. I added some onion and a little extra cream and bacon drippings because the original recipe didn't make enough sauce to coat my pasta. Will be making this again fir sure!!

    I have made this a few times and the ONLY thing I do differently is I use thin spaghetti noodle instead of the rice. This is now a monthly meal at my house, my family LOVES it! Thanks for such a great recipe!
