This is a family favorite."Very nice. I added nutmeg, ground cloves, and ground ginger to the mix. I also replaced the butter with margarine and substituted 1/2 up unsweetened applesauce for 1/2 cup margarine. They came out very cake like and soft. Libby's Great Pumpkin Cookie Preparation
Preheat oven to 350. combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem. Bake 350. 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or nuts. Yields about 32 cookies. Variation substitute 1 cup of raisins for cholate chips.
