This is a family favorite.

"Very nice. I added nutmeg, ground cloves, and ground ginger to the mix. I also replaced the butter with margarine and substituted 1/2 up unsweetened applesauce for 1/2 cup margarine. They came out very cake like and soft. They were enjoyed all around. :)" - pineapplebutter

4 cupsAll purpose flour
2 cupsRolled oats
2 teaspoonsBaking soda
2 teaspoonsCinnamon
1 teaspoonSalt
1 1/2 cupsButter or margarine
1 cupSugar
1 largeEgg
1 teaspoonVanilla
16 ouncesPumpkin; Libby's solid packed
1 cupChocolate chips
2 cupBrown sugar; firmly packed

Libby's Great Pumpkin Cookie Preparation

Preheat oven to 350. combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem. Bake 350. 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or nuts. Yields about 32 cookies. Variation substitute 1 cup of raisins for cholate chips.

i make this w/o oats and w/ white choc chips. Family favorite, nice and soft, cake like cookies.

Not that good. I've had better. It would have been marginally better sans oats.
