1 1/2 poundssmall new red potatoes; (about 15), scrubbed and dried
1/4 cupExtra-Virgin Olive Oil
4 clovesgarlic; crushed, (up to 6)
1 tablespoonfresh rosemary; or 1 teaspoon dried rosemary

Oven Roasted Red Potatoes with Rosemary and Garlic Preparation

Preheat the oven to 350 degrees F.

Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot.

These can also be chilled and served with fried chicken or ham.

    Very Yummy - boiled them for a few minutes before then tossed them in the drained pot with oil, garlic and rosemary before placing in oven dish and into the oven.

    This dish was absolutely DELICIOUS! The only change I made was adding salt and pepper to the mix to give the potatoes a little extra taste. I will boil them a bit before putting in the oven for less cooking time.

    I placed some pieces of bacon over the potatoes( bacon makes everything taste better)and sprinkled some parmesan cheese over them in the last five minutes. Really good.

    I suggest putting these potatoes in with a roasted pork ans for about 45 mins. or untill done depending on the sizw of the poyatoes. (fabulis)
