Soooooo yummy! I added pearl onions into the roasting pan as well! Also made gravy with the pan juices that turned out extra yummy due to the bits of Rosemary floating around in the pan!

I made this for Christmas dinner and it was wonderful! It was last minute and I did not have thyme and used fresh rosemary. I also did not include potatoes. Next time I will use less EEOV especially if I am not including the potatoes. Everyone loved it.

It was delicious! Had to cook it an extra 30 minute to be comepletely done. But, after that loved the Rosemary and potatoes were so crispy and yummy!

Easy and tasty. I followed the suggestion to add some dijon to the garlic-herb mixture and it was a great idea. I'm wondering what a touch of balsamic vinegar might do as well. I think this recipe would also work with boneless skinless chicken thighs.

Next time i'll put the meat in the rack of the roasting pan and the potatoes underneath. But this meat ROCKED,

The flavor in this dish was great. However, I already had a deeper, more square pan out so I used it. Bad choice. Nothing got brown except the potatoes on top. Next time I make this, I will use a true roasting pan because I would love the crispy potatoes and nicely browned pork.

This is a great recipe! I change it only slightly by adding a couple dollups of Grey Poupon dijon mustard to the herb and oil mixture. It makes it a little hard to blend smoothly, but adds a whole lot of flavor.

This makes the heart of a good, complete meal. This recipe is a little heavy on the Rosemary for me, I'll cut that in half next time and double the salt. But, all in all, potatoes and pork together in an easy to put together, stick in the oven kind of meal is a winner.

I was actually looking for a pork chop recipe and I used this tweaking it here and there (throwing in some additional spices, tweaking the cook time and omitting the potatoes) and you know what? Family loved it! Will definitely make this again.
