A quick, basic guacamole recipe that can be added to or extended in many ways. Try adding a diced tomato or two.

Original recipe makes 8
2 eaavocados; (preferably California)
1 smallOnion; minced
1 cloveGarlic; minced and mashed to a paste with 1/2 teaspoon salt
4 teaspoonsfresh lime juice; (or to taste)
1/2 teaspoonGround cumin
1 fresh or pickled jalapeo chili; seeded and minced (wear rubber gloves)
3 tablespoonCoriander; (Cilantro)

Basic Guacamole Preparation

Halve and pit the avocados and scoop the flesh into a bowl. Mash the avocados coarse with a fork and stir in the onion, the garlic paste, the lime juice, the cumin, the chili, and the coriander. The guacamole may be made 2 hours in advance, its surface covered with plastic wrap, and chilled.

Notes

This can be made several hours ahead and refrigerated. The taste and texture are best, however, when freshly made.

There would never be garlic or cumin in this recipe. You would just use white onion,lime juice ,diced seeded tomato, jalapino, celantro and salt.

This recipe is a great base to get it right! Add chopped cilantro, tomatoes, extra jalapeƱo, sea salt.....

It seemed too salty to me. I added tomatoes and a little chopped celery just to use it up. It was good. Next timeI'll cut the salt down.

Added a diced tomatoe, 2 more cloves of garlic, used fresh cilantro and instead of the chilie I used 4 or five drops of key lime Jamaican hot sauce and some ground pepper. Perfect!!

Simple and excellent! If you or your guests do not care for cilantro be careful with the amount specified. Some salt may also be required, but personal preferences will prevail.

As a twist one might also add 6-8 ounces of diced tomatoes.

But excellent as-is, my son and I loved it with the jalapenos!
