Basic Guacamole

A quick, basic guacamole recipe that can be added to or extended in many ways. Try adding a diced tomato or two.
"I doubled the recipe with the exception of the cilantro (I personally don't like cilantro that much) added another clove of garlic and used the juice of one large lime (almost 4 TBSP). | 2 eaavocados; (preferably California) |
| 1 smallOnion; minced |
| 1 cloveGarlic; minced and mashed to a paste with 1/2 teaspoon salt |
| 4 teaspoonsfresh lime juice; (or to taste) |
| 1/2 teaspoonGround cumin |
| 1 fresh or pickled jalapeo chili; seeded and minced (wear rubber gloves) |
| 3 tablespoonCoriander; (Cilantro) |
Basic Guacamole Preparation
Halve and pit the avocados and scoop the flesh into a bowl. Mash the avocados coarse with a fork and stir in the onion, the garlic paste, the lime juice, the cumin, the chili, and the coriander. The guacamole may be made 2 hours in advance, its surface covered with plastic wrap, and chilled.
Notes
This can be made several hours ahead and refrigerated. The taste and texture are best, however, when freshly made.
