Heat oil in wok to medium heat.
Add garlic and stir until turns light brown. Add ribs and sherry. After ribs start turning white (if you are cooking in large quantities, cook in two batches.)transfer ribs to a deep pan and add the rest of the ingrediants. Turn heat to medium low, cover, and stir every 5/10 mins. for about 30 mins.
Remove fat.
Thicken sauce eitrher by turning up heat or adding 2 TBS corn starch premixed with like amount of water.
