Vodka Sauce

Yet another vodka saue recipe (I searched and there are at least 22 on BO.com) This one is easy and very tasty. Serve over penne or your favorite pasta with plenty of fresh grated parmesan and some crusty bread to sop up the extra sauce.

Original recipe makes 8
1 cupvodka
1 teaspoonred pepper flakes; crushed
2 tablespoonsolive oil
3/4 poundprosciutto; chopped
1 large clovegarlic; minced
2 tablespoonsChopped fresh parsley
2 tablespoonsfresh basil; chopped
1 28-oz canroma tomatoes; with juice
2 8-oz cantomato sauce
1 cupHeavy cream
salt and pepper; to taste

Vodka Sauce Preparation

In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour.

Heat olive oil in a large skillet over medium heat. Saut prosciutto, garlic, parsley, basil, salt and pepper until prosciutto is evenly brown. Pour in vodka mixture, and simmer 10 minutes. Crush tomatoes, and stir in with 2 cans of tomato sauce, and 1 (8 ounce) can water. Simmer 15 minutes. Stir in 1 cup heavy cream, and cook 2 minutes - do not allow mixture to boil.

Notes

This sauce freezes and then nukes very well - I usually make a double batch and freeze the extra for quick meals.

I added some diced onion to this recipe, and made it vegan by substituting for the prosciutto and heavy cream. It turned out great! I'll definitely make it again.

This is a great recipe! I made a double batch of this and it came out great.

Once small downside for me was the sauce was a little watery. So for me next time I will not add the water to the sauce.
