"I made this with frozen chicken tenders from Costco. pulled out 12, put in dish frozen. slathered with sauce, put in 200F oven for 35 min. they were watery then, but I didn't mix in the water. put on skewers, 2/skewer. put in broiling pan, slathered sauce over top. broiled for 10 min, turned, redistributed sauce, broiled. served with wild rice pilaf. terrific and quick"- annmartinson

1. Place the chicken in a shallow, non-metallic dish.
2. Mix together the garlic, soy sauce, chilli flakes, peanut butter, tomato puree and pineapple juice. Pour the mixture over the chicken and toss well to coat all the pieces. Cover and leave to marinate for 30 minutes.
3. Thread the chicken pieces on to wooden skewers. Place them under a hot grill for 15 minutes, turning frequently. until evenly browned and cooked through.
tip: Soak the wooden skewers in water for 20 minutes before using, to prevent them from burning.

lisamarr-turner 4 months agoOMG!!!! this is what my kids lovingly refer to as 'peanut butter chicken', and ask me all the time when I am going to make this again. Definitely one of my favorites. I do have to say though, that after the first time making this, I cut the chicken in strips, but do NOT put them on the skewers. Its just easier for me this way.

lisamarr-turner 1 year agoEven my picky eater loved this one and couldnt wait to have it again. I omotted the chile flakes as i didnt habe any on hand, but it turned out wonderfully.
Huntheat 1 year agoWasn't sure about this one as I am more used to a satay with lightly marinated meat and use of a dipping sauce. But this turned out great, and most ingredients are usually on hand. I did have to substitute pureed pineapple for the pineapple juice, still a hit.

IceBlueSparkle 1 year agoVery good - I used light soy sauce and lemon juice (instead of pineapple).
mrcarlon 1 year agoVery good, worked well cooking it in a broiler pan since it's a little cold outside for grilling right now.
Marina333 1 year agoI used a pineapple coconut juice, light soy, and doubled the marinade so I could reserve part to use as a doping sauce. It was awesome. The only reason I did not give 5 stars is because I didn't make the recipe as listed.
joannecreighton 1 year agoI made these with light soy, went down really well at dinner party although needed a dipping sauce to accompany
redneckboy1952 3 years agoThey are very good, but, they are'nt diabetic. It has to much salt. The next time that I make them, I would use Lite Soy Sauce or try something else to replace it with like maybe worchestershire sauce.
Mdihle 3 years agoWorked out great and I paired it with a peanut sauce with a hint of lime and soy sauce...perfect
Bellitude 3 years agoI didn't love the sauce, it was pretty soupy and was a strange mix between sweet and salty.
