1 tspPepper
3/4 tspCinnamon
3/4 tspNutmeg
3 1/2 poundPork loin roast; boneless, rolled

Caribbean Roast Pork Loin Preparation

Combine the oil, pepper, cinnamon, and nutmeg; rub over roast. Place roast on a rack in a shallow roasting pan. Bake at 350 degrees for 1-1/2 to 2 hours or until a meat thermometer reads 160. Let stand for 10 minutes before slicing.

The pork came out tender and juicy. I thought the flavor was a little too light so I think I will increase the spices next time. But very easy to do and it came out delicious!
