| 1/2 cupCelery; chopped |
| 1/2 cupgreen pepper; chopped |
| 1/2 cupturnip; chopped, peeled |
| 1/3 cupcarrots; sliced |
| 1 tblspoonsolive oil |
| 3 cupschicken broth, reduced-sodium |
| 1 16-oz cnStewed tomatoes; chopped |
| 1 1/2 teaspoonThyme, dry |
| 1 Bay leaf |
| 1 cupGreen cabbage; shredded |
| 1 cupGreen Beans; 1" pieces |
| 1 1/2 cupsTurkey breast; cubed |
| 1 tablespoonCider vinegar |
| 1/2 teaspoonSalt |
| 1/8 teaspoonPepper |
Five Vegatable Soup Preparation
In a large saucepan saute'''' the onion,celery,green pepper,turnip and carrotsin oil for 7 minutes
Stir in broth and tomatoes,thyme and bay leaf . Bring to a boil, reduce heat; cover and simmer for 30 minutes
Stir in cabbage and beans; return to boil, reduce heat ; cover and simmer 10 minutes. Stir in turkey; simmer five more minutes longer. Stir in vinegar, salt and pepper; heat thru. Discard bay leaf.
