rjnetto , 1 years agoDidn't have marsala, so substituted it with white wine and a tblspn of brandy. Came out divine. Guests said it tasted like authentic 'marsala' :)

sHellsKitchen , 1 years agoWanted a more lowfat version and found the sauce was lacking body, so I halved the butter/oil and added 1 cup of beef broth, 2 Tbsps half-n-half and some cornstarch to thicken. Loved the flavor that the oregano added.
