Lightly flavored and lightly oiled, this pasta salad has all kinds of vegetables and is a meal of its own. If you've found that deli pasta salads are just far too oily, give this a try. Can keep for up to a week in the fridge.

"This is a great warm weather salad that is easy to make and delicious. I used a marinated kalamata olive medley as well as fresh cucumber, basil and peppers from our garden. (I only used 1/2 of a green and 1/2 of a yellow as we aren't huge fans of an overwhelming bell pepper taste). We also used mozzarella pearls which were easy to fold in. Once the salad was chilled and ready to serve, I added a little fresh grated parmesan cheese for added flavor. Amazing!" - HeffeLump08

6 tablespoonBasil; diced
3 clovesGarlic
pepper; Freshly ground, to taste
Salt; to taste
4 tablespoonExtra Virgin Olive Oil
1 packageRotini (Tri-color); small box
1 packageBuffalo Mozzerella; freshly packed in water
1 canButton mushrooms; drained
1 wholeRed bell pepper; diced
1 wholeYellow bell pepper; diced
1 wholeGreen bell pepper; diced
-- OPTIONAL --
1 canOlives (black or green); sliced
1 wholeCucumber; peeled, seeded and diced

Heather's Pasta Salad Preparation

Bring large stockpot of water to a rolling boil. Boil rotini until just cooked, approximately 10 minutes. Drain and wash with cold water. (If not fully cooked yet, wash with warm water to allow pasta to continue to cook.)

Prepare dressing. It''s a very simple olive oil combination with pressed garlic, with salt and pepper to taste.

In a large bowl, dump drained rotini. Add all other ingredients, and toss with dressing. Serve room temperature.

    My boyfriend and I LOVE this recipe! Peppers are so expensive these days and I don't like mushrooms so I just put green pepper, tomato, and diced cucumber. I also use 2tbsp of oil instead of 4 and it still tastes great. This is so incredibly quick and easy to make. I store it in tupperware for the week & is ready to eat instantly at any moment

    A very good, basic pasta salad. I added balsamic vinegar (which complements the fresh mozzarella), used fresh sliced mushrooms instead of canned and added a chopped beefsteak tomato. I divided the salad in half, and added smalled cubed salami to one half and chicken breast slices (pan seared in butter and olive oil with parsley) to the other. Delicious!
