Attractive and tasty variation on the traditional Shrimp Scampi.
"This was DELICIOUS! Instant replacement for my old scampi recipe.
I used white cooking wine in place of vermouth, and some finely diced red onion for scallions. Didn't have angel hair pasta either, but it was wonderful over some spinach flavored linguine.
I also added some diced cherry tomatoes for a garnish, and it was a beautiful presentation."

Heat butter and olive oil in a large skillet. Add scallions, garlic, and shrimp. Saute until shrimp just turn pink. Add vermouth, cilantro, and lemon juice and heat through. Serve over angel hair pasta and top with freshly grated parmesan or romano cheese.
Nice variation on the traditional scampi.

Jackiechan042003 3 weeks agoOh my! This was sooo freaking good! Made it tonight for our Valentine's Day dinner and we cleared our plates! I sprinkled a little salt and pepper on the shrimp as they were cooking and used wine and lime juice :)

Cnorgeot 1 year agoI used white wine instead of vermouth. Was excellent. Be sure not to over cook the shrimp. Everyone from age 8 to 80 loved it.
