Attractive and tasty variation on the traditional Shrimp Scampi.

"This was DELICIOUS! Instant replacement for my old scampi recipe.

I used white cooking wine in place of vermouth, and some finely diced red onion for scallions. Didn't have angel hair pasta either, but it was wonderful over some spinach flavored linguine.

I also added some diced cherry tomatoes for a garnish, and it was a beautiful presentation." - Nicjones

1 poundShrimp; raw, peeled and deveined
2 tablespoonButter
2 tablespoonolive oil
2 tablespoonScallions; sliced
2 clovesGarlic; crushed
2 tablespoonDry vermouth
2 tablespoonCilantro; fresh chopped
1/2 Lemon; juice

Shrimp Scampi Cilantro Preparation

Heat butter and olive oil in a large skillet. Add scallions, garlic, and shrimp. Saute until shrimp just turn pink. Add vermouth, cilantro, and lemon juice and heat through. Serve over angel hair pasta and top with freshly grated parmesan or romano cheese.

Nice variation on the traditional scampi.
