Black Bean Salad
Zesty cold bean salad that is great for picnics and parties.
"I looked at what I had on hand and made a pantry version of this dish. 4 TBL minced onion rehydrated in 4 TBL water, 1 can corn drained, 1 can chopped tomato with green chilies drained, 4 squirts lime juice and beans, cumin, cilantro and salt as indicated. | 1 cupspring onions; sliced |
| 1 1/2 cupcorn frozen |
| 2 cansblack beans |
| 5 eaRoma tomatoes; chopped |
| 3 tablespoonpickled Jalapenos |
| 1/4 cupCilantro; chopped |
| 2 eaLime juice |
| 1/2 tsGround cumin |
| 1/2 tsSalt |
Black Bean Salad Preparation
Drain and rinse beans. Combine all ingredients in a bowl and toss. Serve chilled or at room temperature.
