Teen Daughter has just turned vegetarian and this was one of the first dishes I made for her. She loves it so much it's one of the standard things she'll take for school lunch, pairing it with tortilla chips. She says it tastes like Chipotle (because of the Cilantro).
Disappointing - black beans, corn, tomatoes, and green onions are a nice base, but I found the dish to be bland overall, except when I'd hit an occasional jalapeno. If I make it again, I'll use chopped jalapenos, more cumin, and maybe some garlic powder.
I made this for the 4th of July and a bbq I recently had at my house. My hubby and kids loved it! Including my picky kid who doesn't really care for vegetables! This will be one of my go to recipes from here on out!
