Servings          
Original recipe makes 4
3 ounceRice noodles; broken
12 ounceChicken, boneless, thighs or breast halves
1/2 cupChicken broth
2 tablespoonSoy sauce
2 tablespoonBasil; dried, crushed
2 tablespoonCornstarch
1 teaspoonChili Oil
1/2 teaspoonTurmeric; ground
1 tablespoonCooking oil
1 cupCarrots; cut in short strips
2 cupBroccoli; florets
1/2 cupRed Sweet Pepper; cut into 1in. strips
1/4 cupCashew halves; or peanuts

Pacific Rim Stir-Fry Preparation

1) In a saucepan cook rice noodles in boiling water for three minutes. Drain; set aside and keep warm.

2) Cut chicken into thin bite size strips. For sauce, combine broth, soy sauce, dried basil, cornstarch, chili oil, and Tumeric; set aside.

3) Pour cooking oil into a wok or large skillet. Heat over medium high heat. Add carrots to wok; cook and stir for one minute. Add broccoli, cook and stir for two minutes more. Add sweet pepper; cook and stir for one and a half to two minutes more or until vegetables are crisp tender. Remove vegetables from wok. Add chicken to wok; cook and stir for two to three minutes or until no longer pink. Push chicken from the center of wok. Stir sauce; add two center of wok. Cook and stir until thickened and bubbly. Return vegetables to wok; add fresh basil. Cook and stir for two minutes or until heated thoroughly. Serve over rice noodles; sprinkle with cashews.

    A nice taste, we served over rice and it was good but I think the noodles would have been much better. Watch that the sauce doesn't thicken too much...had to thin ours a bit.

    Really tastey and easy to make, i added onion and mushrooms. Took probably 10 to prepare and i cooked the noodles at the same time as the main meal. Overall thoroughly enjoyable!

    Very nice and simple. I added chilli to make mine spicy as that's how I like my stir fries. Maybe will try with light soy next time as it was a bit salty, but again that's a plus for me!

    I would have liked more heat, however my husband found it to be just right. Nice, easy and perfect for a weeknight, or leftovers for breakfast with an egg. :)
