This is a fantastic Mexican type one dish meal with the beef, refried beans, tortillas, and vegetables. You can make it to the degree of spicy you desire by the type of tomatos you use. So, go ahead....experiment. AND, OLE!!

"This was excellent and my husband said it tasted very close to the Taco Pizza from Godfather's. I adjusted a few things: I used fat-free refried beans (to save on calories), added a can of chopped green chiles, mixed mozzarella cheese in with the colby-jack cheese and when serving topped it with salsa and sour cream. I also left off the last two tortillas and just added the cheese, covered and baked. Thanks for the great recipe crittermom17!!!" - cogramma

Original recipe makes 9
1 lbGround beef; I use extra lean
1/2 cupGreen pepper; chopped
1/2 cupOnion; chopped
2/3 cupWater
1 pkgTaco seasoning mix
1 15-oz canBlack beans; rinsed and drained
1 14.5-oz canMexican diced tomatoes; undrained
6 whFlour tortillas; (8 INCHES)
1 16-oz canRefried beans
3 cupsmexican cheese; Shredded, low fat if desired

Taco Lasagna Preparation

In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered for 2 minutes.

Stir in the black beans and tomatoes. Simmer, uncovered, for 10 minutes. Place two tortillas in a greased 13-in. x 9-in. x 2-in. baking dish. Spread with half of the refried beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 deg. for 25-30 minutes or until heated through and cheese is melted. YIELD: 9 servings.

    This is mine and my boyfriend's favorite mexican dish we make and it's very filling. It's also very easy to customize how spicy or mild it is.

    5 stars 4 ease. just put it in oven so havent tasted yet but smells and looks amazing! used a round dish that fits tortillas so made more layers. mite take a lil longer 2 cook thru. & no black beans. using salsa & black olives on side. cant wait 2 eat it:)

    Good start. Didn't make it a casserole though. Seemed like a lot of mess and time just to melt some cheese. Made rice and served as fajitas. Tasty and quick.
