6 stripsBacon
2 poundsboneless beef cubes
2 15-oz canskidney beans; drained
1 28-oz cantomatoes; cut up/drained
1 26.5-oz cantomato sauce
1 cuponion; finely-chopped (1 medium onion)
1 cupcarrots; thinly-sliced (1 1/2 large carrot)
1 cupgreen pepper; finely-chopped (2 medium peppers)
1 cupcelery; finely-chopped (2 1/2 Stalks celery)
2 tablespoonParsley; minced
2 clovesgarlic; cloves, minced
1 Bay leaf
2 tablespoonChili powder
1 teaspoonSalt
1 teaspoonFreshly-ground black pepper

Texas Chili Preparation

Fry bacon until crisp. Remove bacon and drain on paper towel. Brown half the beef cubes in a pan with bacon drippings for five minutes. Place in a slow cooker. Repeat with remaining meat.

Stir bacon and remaining ingredients into 3 1/2-quart slow cooker. Cover and cook on LOW setting about 10 hours or until beef is tender. Stir occasionally.

If you don't have a slow cooker place in large pot, cover, place on stove over low heat and follow directions above.

There are NO beans in true Texas chili. Also, no carrots, bell peppers, bay leaf, celery, parsley or tomatoes. Texas chili has very few ingredients. Looks good though, and will probably make it! Thanks for posting it.
