Add a sweet-n-tangy twist to cabbage slaw with dried and fresh fruit.

Original recipe makes 8
Slaw:
4 cupscabbage; 1/2 red & 1/2 green, finely s
1 cupCarrot; shredded
1 Largetart apple; finely chopped, * I use Granny Smith
1/2 cupwalnuts; chopped
1/2 cupdried cherries; chopped -- cranberries or raisins will work
Dressing:; as required
2 tablespoonsCanola oil
2 tablespoonsvinegar, apple cider
2 tablespoonsraw sugar; brown sugar works, * Use Splenda for low sugar
1/2 teaspoonSalt; to taste
lime juice; Juice of 1/2 key lime, optional

Fruited Cole Slaw Preparation

Mix dressing ingredents together in a small bowl, set aside. Toss slaw ingredients together in salad bowl. Pour over slaw and toss until everything is coated. Hold, chilled, at least 1 hour to permit flavors to meld.
