Fruited Cole Slaw

| 4 cupscabbage; 1/2 red & 1/2 green, finely s |
| 1 cupCarrot; shredded |
| 1 Largetart apple; finely chopped, * I use Granny Smith |
| 1/2 cupwalnuts; chopped |
| 1/2 cupdried cherries; chopped -- cranberries or raisins will work |
| Dressing:; as required |
| 2 tablespoonsCanola oil |
| 2 tablespoonsvinegar, apple cider |
| 2 tablespoonsraw sugar; brown sugar works, * Use Splenda for low sugar |
| 1/2 teaspoonSalt; to taste |
| lime juice; Juice of 1/2 key lime, optional |
Fruited Cole Slaw Preparation
Mix dressing ingredents together in a small bowl, set aside. Toss slaw ingredients together in salad bowl. Pour over slaw and toss until everything is coated. Hold, chilled, at least 1 hour to permit flavors to meld.
For variey and crunch I often add a few pine nuts or crushed peanuts,
