Large Jar          
Original recipe makes 1
1 kilogramOnions; (Small) peeled
1 smallchile peppers; as required
1 tablespoonBlack Pepper Corns; to taste
1 teaspoonMustard seed; to taste
1 teaspoonCloves; to taste
1 teaspoonMustard Powder; to taste
500 millilitersApple Cider Vinegar; as required
1/2 cupBrown Sugar; to taste
1 tablespoonSalt; to taste

Pickled Onions Preparation

Peel onions, sprinkle with salt and then cover with cold water.

Leave overnight.

Rinse Onions, and pack into clean re-sealable jars.

In a large saucepan add all of the other ingredients.

Bring to the boil and simmer for 5 minutes.

Pour over onions alrady packed into jars, leaving 1cm headspace.

Seal jars and store in a cool, dark place for a least a month.

Enjoy with sharp cheeses and salads.
