1 kilogram Onions; (Small) peeled
1 small chile peppers; as required
1 tablespoon Black Pepper Corns; to taste
1 teaspoon Mustard seed; to taste
1 teaspoon Cloves; to taste
1 teaspoon Mustard Powder; to taste
500 milliliters Apple Cider Vinegar; as required
1/2 cup Brown Sugar; to taste
1 tablespoon Salt; to taste

Large Jar  


Peel onions, sprinkle with salt and then cover with cold water.

Leave overnight.

Rinse Onions, and pack into clean re-sealable jars.

In a large saucepan add all of the other ingredients.

Bring to the boil and simmer for 5 minutes.

Pour over onions alrady packed into jars, leaving 1cm headspace.

Seal jars and store in a cool, dark place for a least a month.

Enjoy with sharp cheeses and salads.
