Any smoked fish will do
Preheat the oven to 220C.
Using a knife or the slicing blade of a food processor, thinly slice potato and onion.
Layer the slices in a large flameproof casserole with a few thyme sprigs, a bay leaf, butter, freshly ground black pepper and milk.
Bring to a simmer on the hob, then cook at the top of the oven for 30 mins until almost tender. Discard bay leaf.
Top with smoked haddock pieces and dot with butter.
Return to the oven for 15 mins.
Sprinkle with lemon juice, if wished, and top with chopped herbs such as parsley, dill or chives.
