A super crockpot recipe adapted from the beach..

In a large skillet, fry the sliced bacon till its half cooked, then add the diced onions till they're both nice a rich brown. Meanwhile, boil the potatoes on the side till a fork sticks into them. Combine the fried bacon and onions, potatoes in the crockpot. Then add one can of creamed corn and evaporated milk alternating till the crockpot is full. Stir and simmer for about 3-4 hours if you can.
From this base we also make clam chowder by substituting some clams instead of corn.
Serve topped with bits of crisped bacon and/or a sprig of parsley

joinme4coffee 5 months agoI actually doubled the recipe because I cook for seven big eaters. It was a big hit. I did add salt and pepper. Next time I will add whole kernel corn along with the creamed corn. Because I made so much, cooked it on the stovetop because it wouldn't all fit in the slow cooker. Came out absolutely delicious.
cherv1 5 months agoThis didn't have much flavor. It was rather bland and all of the evaporated milk made it too rich. I will not make this again. This recipe made a ton and most of it has gone to waste.
Bcaviz 6 months agoTasty, but lacking flavor, so I added 1 tsp of Thyme, 1/2 tsp of pepper and 2 tsp of salt, it was amazing! I cut the recipe in half for 8 servings.

ChefJamie 2 years agoVery good! I took the lazy route and used diced potatoes. Also i used turkey bacon instead for a healthier option. Yummy to my tummy!
Astancilwomack 2 years agoNot great, but not bad. It was a bit too sweet for me and not a ton of flavor. Might try this base for clam chowder & spice it up a bit.
