A great make ahead breakfast!
"I used grated cucumber, carrot and lettuce instead of meat and I only had four eggs and used less cheese, it came out beautifully. I would definitely make it again, love to try it with meat and the written amount of cheese and eggs but I loved the vegetarian version I made."- Penpasta

JeweledSoul 1 year agoI absolutely love this! I froze them from last night's dinner and I am eating one now from microwave. They came out perfect. I would just recommend buying more tortillas because it made a lot more than 12 tortillas for me.
