A great make ahead breakfast!

"I used grated cucumber, carrot and lettuce instead of meat and I only had four eggs and used less cheese, it came out beautifully. I would definitely make it again, love to try it with meat and the written amount of cheese and eggs but I loved the vegetarian version I made."

2 largePotatoes; peeled, sliced thin
1 smallOnion; chopped
2 lbsMaple breakfast sausage; (Jimmy Dean)
12 Eggs
milk
Salt
Pepper
1/2 lbCheddar cheese; grated
2 cansGreen chili; chopped
12 largeFlour tortillas

Breakfast Burritos Preparation

Fry breakfast sausage in large stock pot, drain in colander allowing grease to drain into a large skillet.

Fry sliced potatoes and onion in the skillet, using sausage greese, until fork tender and browned. Season to taste with salt and pepper while frying. Add potatoes to the stock pot with the sausage, cover and set aside.

Whisk eggs adding milk and scramble. Add to stock pot along with the chili's and cheese. Mix all contents together.

Place into tortillas and roll burrito fashion.

Serve with salsa if desired.

Notes from Laura:

A family favorite. Can be made ahead of time and frozen.

Great for camping or as a make ahead breakfast when you have visitors staying with you.

I absolutely love this! I froze them from last night's dinner and I am eating one now from microwave. They came out perfect. I would just recommend buying more tortillas because it made a lot more than 12 tortillas for me.
