This soup is hearty and will FEED a family of five, Plus a big man. and still have lunch for kids tomorrow. WOW, it smells great and I know my soups. though I did ass one yellow squash, tons of spices, and a mix of dried beans, did white beans other day in the White Chili which was Also a winner. | 6 stalksCelery; diced |
| 8 ouncesPlum tomatoes; (One can) |
| 1/4 cupBasil; chopped, fresh |
| 1 tablespoonParsley; chopped, fresh |
| 2 cupPotatoes; peeled & diced |
| 4 mediumZucchini; diced |
| 1/2 poundGreen Beans; cut into 1/2" pieces |
| 1 smallSavoy cabbage; shredded |
| 2 quartsBeef broth |
| 1 cupElbow Macaroni Noodles; or uncooked rice |
| 1/2 cupParmesan cheese; grated or shredded |
| 1/2 teaspoonPepper |
| 1 dashSalt; to taste |
Classic Minestrone Soup Preparation
Cover washed beans with water; soak overnight.
In a small skillet, cook oil, bacon, garlic and onion over medium heat for 10 minutes, stirring occasionally. Drain beans and put into a large pot; add bacon-onion mixture, carrots, celery, tomatoes and juice, basil, parsley, potatoes, zucchini, green beans, cabbage and broth; cover and simmer 4 hours. Add the macaroni (or rice) about 1 hour before serving
Before serving, add pepper and salt then top with Parmesan cheese.
Serve with a good Italian or garlic bread.
OPTIONS:
Spinach or Swiss chard can be substituted for cabbage.
Canned beans can be substituted for dried or fresh beans.
Add chunks of browned Italian sausage for a more robust version
Drop the bacon and use vegetable broth for a vegetarian version
Notes
A small bowl makes a great start to an Italian meal. A large bowl can be a meal all by itself.
